Satisfying chicken pasta casserole with creamy garlic sauce, and a kick of hot sauce and melted cheese.
Ingredients:
  • 1 (16 ounce) package rotini pasta
  • 2 tablespoons olive oil
  • 2 pounds chicken breasts, cut into 1-inch pieces
  • 1 tablespoon onion powder
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup chicken broth
  • 0.25 cup all-purpose flour
  • 1 (16 ounce) package shredded Cheddar cheese, or as desired
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 0.25 cup heavy whipping cream
  • 3 tablespoons butter
  • 1 tablespoon hot sauce
  • 0.5 teaspoon Worcestershire sauce
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Boil rotini in salted water until al dente, about 8 minutes; then drain.
  • In a large skillet over medium-high heat, sizzle the chicken with a sprinkle of onion powder, garlic, 1 teaspoon of salt, and a dash of black pepper. Stir and cook until chicken is cooked through, about 7 minutes. Then, lower the heat to simmer.
  • Combine chicken broth and flour in a bowl, whisk until smooth. Pour the mixture over the chicken in the skillet. Add half of the Cheddar cheese, diced tomatoes, cream, butter, hot sauce, and Worcestershire sauce; mix well. Cook over medium heat until the sauce thickens, about 10 minutes. Stir in the cooked pasta.
  • Transfer the chicken-pasta mixture into a glass baking dish, then generously sprinkle the remaining Cheddar cheese over the top.
  • Bake until the cheese is hot and melted, about 15 minutes in the preheated oven.
