Transforming cheese and crackers into a delectable savory slice is a breeze with just 5 ingredients. Indulge in a luscious cheddar filling nestled between buttery Arnott's Country cheese crackers that morph into a flaky crust. Perfect for snacking, lunchboxes, or paired with a fresh green salad. Simply let it cool for the ultimate slice experience.
Ingredients:
  • 20 Arnott’s Country Cheese crackers
  • 500g cream cheese, chopped, at room temperature
  • 2 eggs
  • 60ml (1/4 cup) thickened cream
  • 120g (1 1/2 cups) grated vintage cheddar cheese
Instructions:
  • Preheat your oven to 180C/160C fan forced. Lightly grease a 16 x 26cm pan and line it with baking paper, leaving some overhang on the two long sides. Place half of the crackers in 2 rows of 5 on the bottom of the pan, ensuring they don't completely cover the base.
  • Beat the cream cheese with electric beaters until creamy. Mix in the eggs and cream until well combined. Gently fold in the grated cheddar. Spread the mixture evenly over the biscuit base and smooth the top.
  • Place the remaining biscuits on top of the cheese mixture in two rows of five, without worrying about lining them up perfectly with the base crackers. Bake for 25 minutes or until the filling has set. It may puff up slightly but will level out upon cooling.
  • Allow to cool at room temperature until completely chilled. Cut along the scored lines on top to create 10 individual pieces.
