Apple Cheddar and Spice Cookie Tart

Award-winning Fall 2010 recipe: Use cookie mix for a simple sweet crust topped with apples and Cheddar for a delicious dessert.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1 teaspoon apple pie spice
  • 1/2 cup cold butter or margarine, cut into pieces
  • 3/4 cup chopped pecans
  • 1/2 cup finely shredded Cheddar cheese
  • 1 egg white
  • 1 can (21 oz) apple pie filling with more fruit
Instructions:
  • Preheat your oven to 350°F and place a cookie sheet in it. Grease a 10-inch tart pan with a removable bottom using cooking spray. In a large bowl, combine cookie mix and apple pie spice until blended. Use a pastry blender or fork to cut in butter until the mixture is crumbly. Set aside 1 cup of the crumb mixture in a small bowl, then mix in pecans and cheese.
  • Mix the egg white into the remaining crumb mixture in a large bowl until a soft dough forms. Press the dough into the bottom and up the sides of the tart pan.
  • Transfer the apple pie filling to a medium bowl. Use a knife to dice the apples into small pieces. Spread the apple mixture evenly over the cookie dough crust and sprinkle the reserved crumb mixture on top.
  • Preheat oven with tart pan resting on a baking sheet. Bake until edges turn golden brown and topping sets, around 40 to 45 minutes. Allow to cool completely for about 1 hour. To serve, simply remove the sides of the pan and cut into wedges. Store covered at room temperature.
