Classic zucchini slice recipe

Summer zucchini dish, perfect for lunchboxes.
Ingredients:
  • 2 large zucchini, coarsely grated
  • 3 spring onions, thinly sliced
  • 60g pkt Baby Spinach, finely shredded
  • 20.00 ml coarsely chopped dill
  • 150g self-raising flour
  • 60g cheddar cheese
  • 100g fetta, crumbled
  • 180g pea
  • 5 Free Range Eggs, lightly whisked
  • 60ml milk
  • 18.20 gm olive oil
Instructions:
  • Preheat your oven to 180°C. Grease a 20cm x 30cm lamington pan and line it with baking paper, ensuring the sides hang over.
  • Mix zucchini, spring onion, spinach, dill, flour, cheddar, half of the feta, and 1 cup (120g) of peas in a bowl.
  • In a small bowl, combine whisked egg, milk, and oil. Mix this with the zucchini mixture, season, and transfer the mixture into the pan. Smooth the top and sprinkle with the remaining peas and feta.
  • Bake for 40 minutes or until the slice is firm to the touch, then enjoy warm or at room temperature.
