5 ingredient low calorie zucchini slice - a quick and easy twist on the classic favorite!
Ingredients:
  • 800g zucchini
  • 18.20 gm extra virgin olive oil
  • 1 large brown onion, finely chopped
  • 6 eggs, lightly whisked
  • 80g (1/2 cup) wholemeal self-raising flour
  • 40g (1/2 cup) finely grated vintage cheddar
Instructions:
  • Preheat your oven to 190C (170C fan forced). Grease a 17 x 27cm slice pan and line the base with baking paper, leaving the paper to hang over the two long sides.
  • Thinly slice 1 zucchini and coarsely grate the rest. Heat oil in a large non-stick frying pan over medium-high heat. Add onion and cook for 3-4 minutes until softened. Stir in the grated zucchini and cook for an additional 2 minutes. Transfer to a plate and allow to cool for 10 minutes.
  • Clean the pan and give it a light spritz of oil. Heat it over medium-high heat. Cook the zucchini slices for 2-3 minutes on each side until they turn a beautiful golden color. Then, transfer them to a plate.
  • 1. **In a large bowl, mix together the egg and flour until well combined. Add the cheddar and grated zucchini mixture, and season to taste. Transfer the mixture to a prepared pan, smooth the surface, and top with sliced zucchini.** 2. **Bake in the oven for 35 minutes, or until golden and set. Let it rest for 5 minutes before serving.**
