Wholesome zucchini quinoa kale slice - a nutritious twist on a classic, ideal for veggie meals or on-the-go lunches.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 carrots, trimmed, coarsely grated
  • 150g Chopped Kale
  • 85g (1/3 cup) reduced-fat ricotta cheese
  • 3 zucchini, finely grated, squeezed of excess moisture
  • 40.00 ml chopped fresh continental parsley
  • 150g (1 cup) cooked quinoa
  • 200g grape tomatoes, halved
Instructions:
  • Preheat your oven to 180/160C fan-forced. Lightly grease a 20 x 30cm baking pan with oil and line the base with baking paper, leaving the longer sides to hang over the edges.
  • In a large non-stick frying pan over medium heat, heat oil. Stir in the onion and cook until softened, about 3-4 minutes. Add garlic and carrot, cook until garlic is aromatic, about 1 minute. Mix in kale, cook until wilted, about 3 minutes. Season, then let cool slightly for 5 minutes.
  • Combine the eggs and ricotta in a large bowl. Mix in the cooled vegetables, zucchini, parsley, and quinoa. Season to taste. Transfer the mixture to the prepared pan and arrange the tomatoes on top, cut side up. Bake for 25-30 minutes until golden, puffed, and set. Allow to cool for 10 minutes, then slice into 6 pieces.
