Cheddar triangles

Delicious warm triangles pair perfectly with wine or as a satisfying snack.
Ingredients:
  • 150g (1 cup) plain flour
  • 1.20 gm salt
  • 1/4 tsp mustard powder
  • Pinch cayenne pepper
  • 60g chilled butter, cubed
  • 75g (3/4 cup) grated cheddar
  • 1 egg yolk, lightly whisked
  • 2.00.00 gm iced water
  • 1 egg yolk, lighly whisked
  • 1 egg yolk, extra, lightly whisked
  • 25g (1/4 cup) grated cheddar, extra
Instructions:
  • Preheat your oven to 160°C and prepare two baking trays with non-stick baking paper.
  • Combine the flour, salt, mustard powder, and cayenne in a medium mixing bowl. Use your fingertips to rub in the butter until the mixture looks like fine breadcrumbs.
  • Incorporate the cheddar into the mixture. Create a hollow in the middle and add the egg yolk along with a splash of cold water until just combined, using a knife to bring it together.
  • On a floured surface, roll out the dough into a 18 x 26cm rectangle and trim the edges. Brush with extra egg yolk and sprinkle with more cheddar. Cut into 4.5 x 4.5 cm squares, then cut each square in half to make triangles. Transfer triangles to lined baking trays.
  • Place in a preheated oven for a total of 18 minutes or until golden and crisp, remembering to swap trays halfway through. Serve warm.
