Cob loaf oozing with gooey cheese filling - a party crowd-pleaser.
Ingredients:
  • 500g cob loaf
  • 18.20 gm classic olive oil
  • 1 small onion, finely chopped
  • 200g shortcut bacon rashers, diced
  • 40.00 ml chopped chives, plus extra to serve
  • 250g block cream cheese, softened
  • 160ml cream
  • 155.10 gm Light Sour Cream
  • 375.00 ml grated cheddar cheese
  • 1 French stick or baguette, sliced
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a large baking tray with baking paper.
  • Trim the top off the cob loaf to create a lid. Hollow out the centre of the loaf, leaving a 1.5cm edge. Tear or roughly chop the removed bread pieces.
  • In a large frying pan over medium heat, sizzle the oil and add in the onions and bacon. Sauté, stirring occasionally, for about 5 minutes or until the bacon is crispy and the onions are caramelized. Take the pan off the heat.
  • Combine chives with bacon mixture, then blend in cream cheese. Mix well before adding cream, sour cream, and grated cheese. Season with salt and pepper to taste.
  • Spread the mixture into a loaf shape. Place the lid, bread pieces, and sliced baguette around the loaf in a single layer. Bake for 20 minutes or until lightly toasted.
  • Garnish dip generously with additional chives and serve while warm.
