Cheese and spinach quesadillas

Mexican-inspired, flavorful vegetarian dish.
Ingredients:
  • 20g butter
  • 150g bag baby spinach
  • 60g mozzarella
  • 45g feta
  • 20g parmesan
  • Salt & pepper
  • 4 (20cm round) flour tortillas
  • 75g taco sauce
  • 1 egg white, lightly beaten
Instructions:
  • In a spacious non-stick pan, melt butter. Introduce baby spinach and garlic, stir and cook for 2 minutes until the spinach wilts. Take off the heat, mix in cheeses, and gently season with salt and pepper. Remove any extra liquid if needed.
  • Spread a layer of flavorful taco sauce on the tortillas, ensuring to leave a 1cm border untouched. Add 1/4 of the delicious spinach mixture to the center of each tortilla, then delicately brush the edges with egg white. Fold the tortillas in half to encase the filling and press firmly to seal the tasty package.
  • Preheat a non-stick pan over medium heat. Lightly coat tortillas with oil spray and cook for 1-2 minutes on each side, pressing down the edges firmly, until golden and cheese is melted. Slice in half and serve hot.
