Upgrade classic quesadillas with Spinach & Feta Quesadillas. Featuring vibrant flavors like tangy cream cheese, crumbly feta, and fresh spinach and red bell pepper, this recipe takes just 25 minutes to make. Perfect for a quick, veggie-packed snack or meal!
Ingredients:
  • 1 (8-oz.) container fat-free cream cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 8 (8-inch) flour tortillas
  • 1 (9-oz.) pkg. frozen spinach, cooked, squeezed to drain
  • 1 medium red bell pepper, finely chopped (1 cup)
  • 4 oz. (1 cup) crumbled feta cheese
Instructions:
  • Combine creamy cream cheese with a hint of garlic powder and pepper in a small bowl until smooth. Spread 2 tablespoons of this luscious mixture onto each tortilla. Layer each tortilla with 2 tablespoons of spinach, bell pepper, and cheese on one side. Fold the tortillas in half, creating a perfect blend of creamy and flavorful filling.
  • Preheat a large nonstick skillet over medium heat until hot. Add 2 folded tortillas to the skillet and cook for 1 to 2 minutes on each side until they are golden brown.
  • Transfer the quesadillas from the skillet to a platter and cover them with foil to keep them warm. Cut each quesadilla into 4 wedges before serving.
