Delicious feta and spinach pita bake with a crispy crust. Versatile dish for parties or main meals. Easily customize toppings. Perfect go-to for a quick and satisfying meal.
Ingredients:
  • 1 (6 ounce) tub sun-dried tomato pesto
  • 6 (6 inch) whole wheat pita breads
  • 2 roma (plum) tomatoes, chopped
  • 1 bunch spinach, rinsed and chopped
  • 4 fresh mushrooms, sliced
  • 0.5 cup crumbled feta cheese
  • 2 tablespoons grated Parmesan cheese
  • 3 tablespoons olive oil
Instructions:
  • Preheat your oven to 350°F (175°C).
  • On each pita bread, generously spread the flavorful tomato pesto and flip them over onto a baking sheet. Layer with fresh tomatoes, spinach, mushrooms, crumbly feta cheese, and savory Parmesan. Finish by drizzling with olive oil and sprinkling with a dash of pepper.
  • Place the pita breads in the preheated oven and bake until they are perfectly crisp, which should take around 12 minutes. After baking, cut the pitas into quarters before serving.
