Elevate the classic cheese and vegemite sandwich with a stylish sushi roll twist.
Ingredients:
  • 1/4 nori sheet
  • 4 slices high fibre white bread, crusts removed
  • 20.00 gm salt-reduced margarine
  • 20.00 ml salt-reduced Vegemite
  • 2 x 20g cheese stringers
Instructions:
  • Slice nori into four strips measuring 1cm x 10cm each, and dispose of any excess nori.
  • Lay bread slices on a surface, gently flatten with a rolling pin, and generously spread with margarine.
  • Spread bread slices evenly with Vegemite, leaving a 1cm border at the edge furthest from you. Pull cheese apart to form strings, then divide into 4 portions. Stack cheese on bread slices nearest to you, then roll up bread slices to enclose filling. Wrap 1 nori strip around each sandwich, securing ends with water. Finally, place 2 sushi sandwiches in each lunchbox.
