Cheese ball trio on herb ring, a festive and delicious Christmas wreath.
Ingredients:
  • 150g goat’s cheese
  • 200g gouda cheese, finely grated
  • 250g cream cheese, at room temperature, chopped
  • 2 green shallots, thinly sliced
  • 14.40 gm honey
  • 35g (1/3 cup) pecans
  • 45g (1/4 cup) natural almonds, roasted
  • 50g (1/2 cup) wasabi peas
  • 40.00 ml finely chopped fresh continental parsley leaves
  • 170g pkt dried cranberries, finely chopped
  • 9.00 gm sesame seeds, toasted
  • Fresh herbs (such as rosemary, thyme, sage sprigs, bay leaves) to decorate
Instructions:
  • Mix the goat's cheese, gouda, cream cheese, shallot, and honey in a bowl. Season to taste.
  • In a food processor, finely chop pecans and almonds. Transfer to a bowl. Clean the processor. Then, finely chop wasabi peas in the processor, transfer to a separate bowl, and mix with parsley. In a third bowl, combine cranberries and sesame seeds.
  • Shape teaspoon-sized portions of the cheese mixture into balls. Coat one-third of the balls in the nut mixture by pressing firmly. Repeat the coating process with the remaining cheese balls using the wasabi mixture and cranberry mixture. Arrange the coated cheese balls in a ring shape on a serving board or platter. Garnish the display with fresh rosemary, thyme, sage, bay, and olive leaves.
