Indulgent brunch souffle made with cheese-filled blintzes, sour cream, and eggs.
Ingredients:
  • 0.5 cup butter
  • 2 (13 ounce) packages frozen cheese-filled blintzes
  • 6 egg whites
  • 6 egg yolks
  • 2 cups sour cream
  • 0.33333334326744 cup white sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) for a perfect bake.
  • Place the butter in a 9x13 inch baking dish and bake until melted, for about 3 minutes. Arrange the blintzes in a single layer on top of the melted butter in the dish.
  • In a bowl, beat the egg whites until soft peaks form, this should take about 5 minutes. Set aside for later use.
  • In a large bowl, combine egg yolks, sour cream, sugar, vanilla extract, and salt until smooth. Gently fold in 1/3 of the whipped egg whites using a rubber spatula or wire whisk, making sure to incorporate them fully. Add the rest of the whipped egg whites and fold until just combined. Pour the mixture over the blintzes in the baking dish.
  • Bake in the oven until the eggs are fluffy and the top is golden brown, approximately 45 minutes.
