Ham and Cheese Crêpes

Elevate the French classic ham and cheese crêpe with Gruyère cheese using the perfect technique for a delicious dish.
Ingredients:
  • 1.25 cups all-purpose flour
  • 4 large eggs
  • 1 tablespoon melted butter
  • 1 teaspoon butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons butter, divided, or more as needed
  • 2 tablespoons Dijon mustard
  • 0.5 slice thinly sliced ham
  • 8 ounces shredded Gruyere cheese
Instructions:
  • Combine flour, milk, eggs, and melted butter in a blender and blend until smooth, about 1 to 2 minutes. Let the batter rest for at least 20 minutes.
  • In a skillet over medium heat, melt 1 teaspoon of butter. Sauté onions, stirring occasionally, until they caramelize and turn golden brown, approximately 5 minutes. Set aside.
  • Heat a crêpe pan or nonstick skillet over medium heat with a touch of melted butter. Pour 1/4 cup of batter into the pan, swirling to cover the bottom. Cook until the crêpe develops small brown spots, about 2 minutes.
  • Carefully release the crêpe from the pan using a spatula and flip gently to brown the other side for 1 to 2 minutes. Transfer the crêpe onto a plate. Continue cooking the remaining batter, buttering the pan as necessary, and layering crêpes between parchment or waxed paper.
  • Prepare one crêpe at a time in the warm pan. Spread mustard on one half, layer with ham, sautéed onion, and Gruyère cheese. Fold the other half over the filling, press gently, and heat until cheese melts. Fold in half again to quarter the size.
