Cheese platter with dried muscatels and walnut bread

Craft a stunning cheese platter with a variety of fine cheeses paired with fresh walnut bread.
Ingredients:
  • 200g brie
  • 150g blue cheese (such as Roquefort)
  • 150g vintage matured cheddar
  • 350g bunch dried muscatels
  • 1 large red apple, thinly sliced
  • 2 tsp (7g/1 sachet) dried yeast
  • 42.90 gm honey
  • 165ml lukewarm water
  • 250g plain flour
  • 1.80 gm salt
  • 100g walnuts, lightly toasted, chopped
Instructions:
  • Mix the yeast, honey, and water in a small bowl. Let it sit in a warm, draft-free spot for 10 minutes until it's frothy.
  • Combine sifted flour and salt in a large bowl, create a well in the center. Add yeast mixture, oil, and walnuts. Mix until a soft dough forms. Knead on a lightly floured surface for 10 minutes, until smooth and elastic. Place dough in a large oiled bowl, cover, and let it rise in a warm, draft-free place for 1 hour, until doubled in size.
  • Gently press dough down, then knead on a floured surface until smooth. Shape into an 8 x 20cm log and place on a greased oven tray. Cover with plastic wrap and let it rise in a warm, draught-free place for 40 minutes. Preheat oven to 200°C. Dust dough with flour, make 3 diagonal slits on top with a sharp knife. Bake for 20 minutes until golden and sounds hollow when tapped. Cool on a wire rack.
  • Take the cheese out of the fridge one hour before serving. Serve with muscatels, apples, and walnut bread slices.
