Fig, walnut and fennel seed log

Kick off the party with a summer-perfect dried fruit log.
Ingredients:
  • 2 tsp fennel seeds
  • 35g (1/4 cup) sesame seeds
  • 250g (1 1/4 cups) dried figs, roughly chopped
  • 100g (1 cup) walnuts, roasted
  • 40.00 ml balsamic vinegar
  • 1 orange, zested
  • Assorted cheeses, to serve
  • Crackers, to serve
Instructions:
  • Preheat a small frying pan over medium heat. Add fennel and sesame seeds, and sauté for 2 minutes until sesame seeds are golden brown. Combine the toasted seeds with figs, walnuts, vinegar, and zest in a food processor and pulse into a coarse paste. Shape the mixture into a log on a piece of plastic wrap, roll tightly, and twist the ends to secure. Chill in the refrigerator for 1 hour until set.
  • Slice the log and elegantly arrange on a cheese board alongside a selection of cheeses and crackers for a delightful accompaniment.
