Fig and walnut cookies: a perfect balance of sweet and nutty flavors for a refreshing summer delight.
Ingredients:
  • 0.5 cup white sugar
  • 0.25 cup golden brown sugar
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup fresh figs, halved
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 375°F (190°C) and grease two baking sheets.
  • In a bowl, cream together butter, white sugar, and brown sugar until well combined. Add egg and vanilla extract; mix well. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually stir the flour mixture into the sugar mixture until fully combined.
  • Remove the flesh from the figs, setting aside 2 tablespoons. Chop the figs and scooped middles, then mix them with the walnuts into the cookie dough.
  • Scoop batter onto the baking sheet and add a dollop of fig pulp on top of each mound.
  • Bake until the cookie edges are lightly browned, 12 to 15 minutes in the preheated oven.
