Bake cheesy mashed potato mounds for a delicious potluck appetizer.
Ingredients:
  • 1 cup water
  • 2 tablespoons butter
  • 1 1/3 cups plain mashed potato mix (dry)
  • 1 egg
  • 1/4 cup chopped fresh chives
  • 24 cubes (about 2 3/4 oz.) VELVEETA™ Original Cheese (from 8 oz. box)
  • 1 tablespoon water
  • 1 cup plain mashed potato mix (dry)
  • Butter-flavor nonstick cooking spray
Instructions:
  • In a medium saucepan, boil 1 cup water with butter and salt. Stir in 1 1/3 cups mashed potato mix, 1 egg, and chives until fully combined. Allow to sit for 30 seconds, then stir and let cool for 10 minutes.
  • Preheat oven to 400°F. Scoop out 24 small mounds of mashed potatoes, approximately 1 tablespoon each, onto an ungreased cookie sheet. Flatten them into disks and place a cheese cube in the center of each disk. Using a spatula, carefully lift each disk from the sheet and pinch the potatoes around the cheese to form balls.
  • In a small bowl, whisk together 1 egg and 1 tablespoon water until smooth. Put 1 cup of mashed potato mix in a separate shallow dish. Roll balls in the potato mix, dip in the egg mixture, then coat again in the potato mix. Transfer to an ungreased cookie sheet.
  • Before baking, generously coat the potato balls with nonstick cooking spray. Bake at 400°F for 10-12 minutes, or until the potato coating has a golden brown hue. Serve promptly.
