Delicious cheese-filled mashed potato bites.
Ingredients:
  • 4 russet potatoes
  • 1 tablespoon butter, softened
  • 0.5 cup shredded Cheddar cheese
  • 0.5 teaspoon garlic, minced
  • 0.5 cup chopped fresh cilantro
  • salt and pepper to taste
Instructions:
  • In a large pot, gently submerge the potatoes in salted water and bring to a boil. Lower the heat to medium-low, cover, and let simmer until tender, approximately 20 minutes. Drain and let the potatoes steam dry until they are cool enough to handle.
  • Peel, mash hot potatoes until smooth. Mix in butter, Cheddar cheese, garlic, cilantro, mash until blended. Season with salt and pepper. Shape into 10 balls, gently flatten by hand.
  • Heat a large skillet over medium-high heat and coat with cooking spray. Cook 5 poofies at a time until they are golden brown on both sides, about 3 minutes per side. Repeat with the rest of the poofies. Serve the poofies warm for the best flavor.
