Impressive mango-passionfruit trifles with cream cheese layers, caramelized bread crumbs. Ready in just 30 minutes using leftover bread rolls for a crispy, buttery topping.
Ingredients:
  • 2 x 60g brioche burger buns
  • 80g unsalted butter
  • 40.00 gm caster sugar, plus 55g (1 ⁄4 cup), extra
  • 250g cream cheese, at room temperature, chopped
  • 1 lemon, rind finely grated
  • 500ml (2 cups) thickened cream
  • 21.00 gm fresh lemon juice
  • 300g fresh or thawed frozen mango, pureed
  • Fresh passionfruit pulp, to serve
Instructions:
  • Tear brioche into pieces and pulse in a food processor until fine crumbs. Heat butter in a frying pan over medium heat. Add brioche crumbs and sugar. Cook, stirring occasionally, for 5 minutes until golden. Spread mixture evenly on a baking tray.
  • In a mixing bowl, combine cream cheese and extra sugar, then use electric beaters to blend until smooth. Mix in lemon rind and half of the cream, beating until thick and well combined. Add lemon juice and stir until incorporated. In a separate bowl, use electric beaters to whip the remaining cream until firm peaks form.
  • In 4 serving glasses, layer half of the brioche crumbs, followed by half of the cheesecake mixture and half of the mango. Repeat the layers with the remaining brioche crumbs, cheesecake mixture, and mango. Finish by topping with whipped cream and a drizzle of passionfruit before serving.
