Cheesy Apple Polenta Bites

Satisfy a crowd with savory apple polenta smothered in melted cheese.
Ingredients:
  • 1 cup yellow cornmeal
  • 1 cup cold water
  • 2 3/4 cups boiling water
  • 1 teaspoon salt
  • 2 tablespoons grated onion
  • 1 tablespoon chopped fresh or 1 teaspoon dried sage leaves
  • 1 cup shredded Cheddar cheese (4 ounces)
  • 1 small unpeeled apple
  • Juice of 1 medium lemon (2 to 3 tablespoons)
Instructions:
  • Prepare the square 8x8x2-inch baking dish by lining it with aluminum foil, leaving 1-inch overhang at two opposite sides, then grease the foil. Combine cornmeal and cold water in a 2-quart saucepan. Add boiling water and salt. Cook for about 5 minutes, stirring constantly until thickened. Reduce heat to low, then stir in onion, sage, and 1/2 cup of cheese. Cook uncovered for 5 minutes, stirring occasionally. Remove from heat.
  • Smooth the cornmeal mixture (polenta) evenly in a baking dish. Cover and refrigerate for at least 12 hours until it’s firm.
  • Preheat oven to 400°F. Grease a 15 1/2x10 1/2x1 inch jelly roll pan. Using the foil edges, transfer the polenta from the baking dish, then cut it into 36 squares by slicing it into 6 rows by 6 rows. Cut each square diagonally into 2 triangles and arrange them on the prepared jelly roll pan. Bake for about 15 minutes until they turn golden brown.
  • Thinly slice the apple and then cut the slices into fourths. Dip the apple pieces in lemon juice to prevent discoloration. Place 1 apple piece on each triangle, sprinkle 1/2 cup cheese over the apples, and bake for approximately 5 minutes until the cheese melts. Serve warm.
