Delicious apple and sausage casserole with Italian cheeses in a flaky pie crust - perfect for autumn!
Ingredients:
  • 1 basic pie dough recipe , rolled out and lining a 9 or 10-inch pie dish, or 8x8 baking dish, chilled (or one frozen pie crust)
  • 2 large tart green apples, peeled and sliced 1/4-inch thick
  • 1/2 medium onion, chopped (about half a cup)
  • 1 teaspoon sugar
  • 3 tablespoons butter
  • 3/4 pound sweet Italian sausage (bulk, or removed from casings)
  • 1 clove garlic, minced
  • 2 cups (8 ounces) shredded fontina, provolone, and or asiago cheese
  • 1 cup ricotta cheese
  • 1/4 cup feta cheese
  • 2 eggs, slightly beaten
Instructions:
  • Preheat your oven to 350°F.
  • Pre-bake the pie crust: Line the inside of a pie shell with heavy aluminum foil, pressing against the dough on the sides. Fill to the rim with pie weights (sugar or beans work well). Bake for 35 minutes until the crust begins to brown. Remove from oven, let cool, and remove foil and pie weights.
  • In a large skillet over medium heat, melt butter. Add apples, onions, and sugar, cook until tender, about 5 minutes, stirring occasionally. Add garlic in the last 30 seconds and cook until fragrant. Transfer to a separate bowl.
  • Sear the Italian sausage in a skillet over medium heat, stirring occasionally, until fully cooked. Transfer to a paper towel-lined dish to drain excess fat.
  • Combine the cheeses and beaten eggs in a medium-sized bowl.
  • Assemble the pie: Start with a layer of sausage at the bottom of the pre-baked pie crust, top it with the cooked apple onion mixture, and finish by pouring the cheese egg mixture evenly over the top.
  • Bake: Preheat oven to 350°F and bake for 35-40 minutes until a knife comes out clean. Rest for 10 minutes before serving.
