Cheesy, savory breakfast casserole with cheddar, chives, and crispy bacon.
Ingredients:
  • cooking spray
  • 4 slices bread, crusts removed
  • 1.5 cups skim milk
  • 1 cup egg substitute (such as Egg Beaters®)
  • 1 tablespoon chopped fresh chives
  • 6 slices cooked bacon, crumbled
  • 1 cup Cheddar cheese
Instructions:
  • Coat a 9-inch square baking dish with cooking spray and line the bottom with bread slices in a single layer.
  • In a bowl, combine milk, egg substitute, and chives, whisking until blended. Pour this flavorful mixture over the bread slices in the baking dish. Sprinkle with crispy bacon crumbles. Cover with plastic wrap and chill in the refrigerator for 8 hours or overnight.
  • Unwrap baking dish and allow it to reach room temperature, approximately 30 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Bake the casserole in the preheated oven for 40 minutes until set. Sprinkle cheese over the top and bake for an additional 5 minutes until melted.
