Easy side dish for any meal or party, no mess guaranteed!
Ingredients:
  • 1 1/2 lb small (two-bite) Yukon gold potatoes, halved
  • 4 teaspoons oil
  • 2 tablespoons ranch dip mix (from 1-oz package)
  • 1 jalapeño chile, seeded, finely chopped
  • 4 slices cooked bacon, coarsely chopped
  • 1 cup shredded Cheddar cheese (4 oz)
Instructions:
  • Preheat the grill, then cut two large sheets of heavy-duty foil measuring 18x12 inches each and spray them with cooking spray.
  • Place cut potatoes in a medium bowl. Drizzle with oil and sprinkle with ranch dip mix. Add jalapeño chile and stir until everything is evenly coated. Divide the mixture evenly onto each foil sheet and top with bacon.
  • Fold two sides of the foil together so the edges meet, creating a tight 1/2-inch fold; fold again to allow for heat circulation and expansion. Seal the other two sides by folding them securely.
  • 1. Preheat the grill to medium heat and place the foil packs on it. Cover and cook for 12 minutes. Rotate the packs halfway and continue cooking for another 12 to 14 minutes until the potatoes are tender. Remove the packs from the grill, carefully open the foil, sprinkle the potatoes with cheese, and garnish with sliced jalapeño chile if desired.
