Serve up irresistible scallop-stuffed puff pastry shells at your game-day spread and be amazed as they disappear in no time.
Ingredients:
  • 5 puff pastry shells (such as Pepperidge Farm®)
  • 2 tablespoons butter, divided
  • 12 ounces bay scallops
  • 0.33333334326744 cup sliced mushrooms
  • 1 tablespoon minced shallots
  • 0.5 cup half-and-half
  • 1 tablespoon all-purpose flour
  • 2 tablespoons dry white wine
  • 1 tablespoon dry sherry
  • 0.5 teaspoon lemon juice
  • 0.5 teaspoon Dijon mustard
  • 0.25 cup shredded Parmesan cheese
  • 1 tablespoon chopped fresh tarragon
  • ground black pepper to taste
Instructions:
  • Preheat the oven to a toasty 380 degrees F (193 degrees C) and arrange pastry shells on a baking sheet.
  • Bake until golden brown, about 20 minutes in the preheated oven.
  • As the pastry shells bake, join me in a dance of flavors by melting 1 tablespoon of butter in a medium-sized skillet over medium-high heat. Gently place the scallops in the skillet and saute them swiftly on both sides until they turn a beautiful golden brown, which should take around 3 to 5 minutes. Remember, mastering this art requires you not to overcook them. Once done, graciously remove the scallops from the skillet and set them aside for a moment of anticipation.
  • Lower the heat to medium and use the remaining butter to melt in the skillet. Introduce the mushrooms and shallots, then sauté until they are barely tender, which should take around 3 to 5 minutes.
  • Combine half-and-half and flour in a bowl, then pour the mixture into the skillet with the mushrooms. Whisk until the sauce is smooth and thickened, for about 5 minutes. Stir in wine, sherry, lemon juice, and mustard. Add Parmesan cheese, tarragon, and black pepper, then mix well. Finally, add the cooked scallops to the skillet, stir, and reheat for 1 to 3 minutes.
  • After baking, gently remove the pastry shells from the oven and delicately remove the tops. Proceed to generously fill them with a delectable mixture of cheesy scallops.
