Indulge in a flavorful cheesy beef casserole with tomato and rice for a satisfying meal.
Ingredients:
  • 1 lb. lean ground beef
  • 1 (1-oz.) pkg. onion soup mix
  • 2 medium tomatoes, chopped
  • 1 1/2 cups uncooked instant rice
  • 1 1/2 cups water
  • 1 medium tomato, sliced
  • 4 oz. (1 cup) shredded colby-Monterey Jack cheese blend
Instructions:
  • Preheat your oven to 400°F and generously coat an 8-inch square glass baking dish or 2-quart casserole with nonstick cooking spray.
  • In a large skillet over medium-high heat, cook the ground beef until thoroughly cooked, while stirring frequently. Drain any excess fat. Add soup mix, chopped tomatoes, rice, and water. Bring to a boil. Transfer the mixture to a sprayed baking dish and cover tightly with foil.
  • Bake uncovered at 400°F for 20-25 minutes until liquid is absorbed and rice is tender. Top with tomato slices, sprinkle with cheese, and bake an additional 10 minutes until cheese is melted.
