Transform Brussels sprouts haters into lovers with this easy, one-pan dish of cheesy Brussels sprouts with bacon.
Ingredients:
  • 4 strips bacon, chopped
  • 1 pound Brussels sprouts, trimmed and cut in half lengthwise
  • 1 large shallot, finely chopped
  • 1/2 cup half-and-half
  • 1 1/2 tablespoons Dijon mustard
  • 1/3 cup freshly grated Parmesan cheese
  • 1 cup shredded sharp white Cheddar cheese, divided
  • 1 teaspoon garlic powder
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Cook bacon in a skillet over medium heat until crispy, about 3 to 5 minutes. Place the cooked bacon on a paper towel to drain, keeping the bacon grease in the skillet.
  • In a hot skillet, sear sprouts cut side down for 4 minutes until golden. Add shallots and cook for 2 to 3 more minutes. Transfer sprouts to a plate and wipe the skillet clean.
  • Combine half-and-half and Dijon in the skillet, then stir in Parmesan, half of the Cheddar, garlic powder, salt, and pepper. Gently mix in the sprouts. Sprinkle the remaining Cheddar evenly over the sprouts in the skillet.
  • Bake until golden brown and bubbling, 12 to 15 minutes. Check sprouts for tenderness with a knife tip. If needed, add a drizzle of half-and-half for moisture.
  • Take the sizzling skillet out of the oven, generously sprinkle with crispy bacon, and present it beautifully for serving.
