Homemade relish lasts a week in the fridge. Enjoy with Bolognese, sandwiches, or as a tasty addition to a cheese and deli meat platter.
Ingredients:
  • 4 Brand Cheese Burger Patties
  • 4 slices Brand Colby Cheese
  • 4 Ciabatta Rolls, toasted
  • 8 baby gem lettuce leaves
  • 200g drained beetroot slices
  • 4 sandwich pickles, drained, sliced lengthways
  • 1 small brown onion, chopped
  • 1 garlic clove, crushed
  • 1 birdseye chilli, halved, seeded, finely chopped
  • 500g tomatoes, chopped
  • 32.00 gm brown sugar
  • 40.00 ml apple cider vinegar
Instructions:
  • Heat oil in a saucepan over medium heat. Cook onions, garlic, and chilli for 5 minutes until onions soften. Add tomatoes and cook for 5 minutes until tomatoes soften. Stir in sugar and vinegar, then cook for 10 minutes until thickened. Season with salt and pepper. Allow to cool before serving.
  • Preheat the barbecue grill, chargrill, or large frying pan over medium heat with oil. Cook the burger patties for 5 minutes until browned underneath. Flip and cook for another 5 minutes, adding a slice of cheese on top of each patty for the final 2 minutes, until golden and fully cooked.
  • Assemble the roll bases on serving plates. Layer with lettuce, patties, beetroot, pickles, and tomato chilli relish. Place the roll tops to finish.
