Creamy catfish and vegetable bake with gooey cheese. Irresistible crowd-pleaser.
Ingredients:
  • 2 tablespoons butter
  • 0.5 small onion, chopped
  • 1 (14 ounce) can chicken broth
  • 1 cup water
  • 0.5 cup chopped celery
  • 1 cup sliced baby carrots
  • 2 medium potatoes, cubed
  • 3 cups milk, divided
  • 0.33333298563957 cup cake flour
  • 1 teaspoon celery salt
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1.5 pounds catfish fillets, cut into 1 inch pieces
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • In a Dutch oven over medium heat, melt butter and saute the onion until tender. Add chicken broth and water, then stir in celery, carrots, and potatoes. Cook for 10 minutes, stirring occasionally, until vegetables are tender.
  • Whisk together 1 1/2 cups of milk and cake flour in a small bowl, then incorporate the mixture into the Dutch oven.
  • Combine the rest of the milk with celery salt, salt, and pepper in the Dutch oven. Simmer and stir occasionally for about 10 minutes until the mixture thickens.
  • Gently fold in the catfish, simmer for 5 minutes until easily flaked with a fork. Add Cheddar cheese, continue cooking for another 5 minutes until melted.
