Creamy garlic chicken and penne baked with melty Parmesan and mozzarella.
Ingredients:
  • 1 tablespoon olive oil
  • 3 skinless, boneless chicken breast halves, cubed
  • 4 garlic cloves, minced
  • 2.5 cups chicken broth
  • 2.5 cups heavy whipping cream
  • 1 (16 ounce) package penne pasta
  • 2 cups grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
Instructions:
  • In a skillet, heat oil over medium heat. Sauté chicken with salt and pepper until golden brown, approximately 5 minutes. Toss in garlic and cook until fragrant, around 2 minutes. Pour in broth and heavy cream, then mix in pasta and bring to a boil. Lower the heat and simmer until pasta is tender, about 15 minutes.
  • Position the oven rack 6 inches below the broiler and preheat the broiler. Grease an 11x17-inch baking pan.
  • Spread half of the pasta mixture into the pan, then sprinkle half of the Parmesan and mozzarella cheeses over it. Add the remaining pasta on top and finish with the rest of the Parmesan and mozzarella cheeses.
  • Broil in the hot oven until the cheese is beautifully golden brown, for about 10 to 15 minutes.
