Cheesy Chicken and Vegetable Casserole

Transform leftover chicken into a mouthwatering vegetable casserole.
Ingredients:
  • 2 cups cut-up cooked chicken
  • 1 jar (16 oz) Cheddar cheese pasta sauce
  • 1 bag (1 lb) frozen broccoli, carrots and cauliflower, thawed, drained
  • 1 1/4 cups Original Bisquick™ mix
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup firm butter or margarine
  • 1 egg, slightly beaten
Instructions:
  • Preheat your oven to 400°F. Combine chicken, pasta sauce, and vegetables in a large bowl. Transfer the mixture to a 9-inch square pan without greasing it.
  • Combine Bisquick mix, Parmesan cheese, and butter in a small bowl. Use a fork or pastry blender to mix until crumbly. Add the egg and stir well. Sprinkle the mixture over the chicken.
  • Bake for 20-22 minutes, or until the topping turns a beautiful light golden brown.
