Cheesy corn and bacon mac 'n' cheese recipe

Irresistible baked mac 'n' cheese with bacon, sweet corn, and gooey cheese for a hearty family meal.
Ingredients:
  • 750.00 ml dried elbow pasta
  • 60g butter
  • 4 middle bacon rashers, trimmed, chopped
  • 62.50 ml plain flour
  • 1/2 tsp dried thyme leaves
  • 643.75 gm milk
  • 5.90 gm hot English mustard
  • 375.00 ml grated tasty cheese
  • 420g can corn kernels, drained
  • 3 green onions, thinly sliced
  • 62.50 ml panko breadcrumbs
  • Fresh flat-leaf parsley leaves, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and generously grease a 12-cup roasting pan.
  • Boil pasta in a large saucepan following package instructions. Drain and return to the pan.
  • In a large saucepan over medium-high heat, melt 10g butter until sizzling. Add bacon and cook, stirring occasionally, until golden brown, about 5 minutes. Drain on paper towel.
  • In a saucepan over medium heat, melt the remaining butter. Add flour and cook, stirring with a wooden spoon, for 1 to 2 minutes until the mixture bubbles. Mix in garlic and thyme, then gradually stir in milk. Bring to a boil, then reduce heat to medium and cook for 4 to 5 minutes until thickened. Add mustard and 1/2 cup of cheese, stirring for 1 minute until melted and smooth.
  • Toss pasta with sauce, corn, onion, and most of the bacon. Season with salt and pepper. Transfer to baking dish. Mix remaining bacon and cheese with breadcrumbs in a bowl. Sprinkle over pasta. Bake until golden, about 20-25 minutes. Garnish with parsley and serve.
