Quick, cheesy vegetarian omelette packed with hidden veggies.
Ingredients:
  • 1 corn cob, husk and silk removed
  • 2 Free Range Eggs
  • 20.60 gm milk
  • 20.00 ml coarsely chopped chives
  • 30g cheddar cheese
  • Chopped chives, extra, to serve
  • 2 slices Stone Baked by Laurent Multigrain Sourdough Vienna*, toasted
Instructions:
  • Cut the kernels off the corn cob using a small serrated knife.
  • Combine eggs, milk, and chives in a small bowl. Spray a non-stick pan with olive oil and heat over medium-high. Add half of the corn kernels and cook for 2 minutes until tender, stirring occasionally.
  • Pour half of the luscious egg mixture over the tempting corn in the pan and gracefully swirl to coat. Sprinkle half of the irresistible cheddar on top. Savor the aroma as it cooks for 1-2 mins until the egg is nearly set. With finesse, fold in half using a spatula and plate elegantly. Repeat the artistry with the remaining corn kernels, egg mixture, and cheddar in the same alluring manner.
  • Garnish the omelettes generously with fresh chives and serve hot alongside toast.
