Quick Chicken and Corn Chowder

Cheesy corn chowder: thick, comforting soup with chicken.
Ingredients:
  • 8 ounces skinless, boneless chicken breast halves, cut into bite-size pieces
  • 0.5 cup chopped onion
  • 0.5 cup chopped red bell pepper
  • 1 clove garlic, minced
  • 4 cups low-sodium chicken broth
  • 1.5 cups frozen corn
  • 1 cup skim milk
  • 1 tablespoon cornstarch, or more as needed
  • 1 cup white beans, drained and rinsed
  • 1 cup shredded Cheddar cheese
  • 0.25 teaspoon ground black pepper
Instructions:
  • In a saucepan over medium heat, cook chicken, onion, red bell pepper, and garlic in olive oil until chicken is cooked through and onion is soft, about 3 to 5 minutes. Stir in chicken broth and corn.
  • Combine milk and cornstarch until smooth; stir into soup. Bring to a boil, then simmer to thicken for 15 minutes. Add white beans, Cheddar cheese, salt, and pepper. Simmer until cheese melts, around 5 minutes.
