Quick and easy corn chowder packed with ham, chicken, and potatoes for a comforting lunch.
Ingredients:
  • 1 tablespoon bacon drippings
  • 1 cup chopped deli-style ham
  • 10 ounces diced cooked chicken
  • 1 cup peeled and diced potatoes
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried marjoram
  • 0.5 teaspoon onion powder, or more to taste
  • 0.25 teaspoon garlic powder
  • 1 (15.25 ounce) can whole kernel corn, undrained
  • 1 (15 ounce) can cream-style corn
  • 1 (10.75 ounce) can low-sodium chicken broth
  • 0.5 cup low-fat (1%) milk
Instructions:
  • In a large Dutch oven or stockpot, heat up the bacon drippings over medium heat. Sauté the ham until slightly browned for about 5 minutes. Add the chicken and potatoes, cooking until the potatoes soften a bit, approximately another 5 minutes. Season with thyme, marjoram, onion powder, and garlic powder for a flavorful touch.
  • Empty cans of whole kernel corn, cream-style corn, and chicken broth into the pot. Gently incorporate the milk. Bring the mixture to a boil, then simmer on medium-low heat until the potatoes are fully tender, approximately 10 minutes.
