Cheesy corn party-perfect side dish!
Ingredients:
  • 4 ears fresh corn
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup mayonnaise ( Kewpie brand preferred)
  • 2 cups shredded mozzarella cheese, divided
  • 1 teaspoon gochugaru, divided
  • 3 green onions, chopped
  • 3/4 teaspoon salt
Instructions:
  • Prepare the corn by shucking it to remove the husks and silks. Place a large, shallow bowl in the sink. Hold the shucked corn by the stalk end and stand it upright in the bowl. Use a sharp knife to carefully cut the kernels off the cob in long strips.
  • Combine all corn cheese ingredients in a small nonstick or cast iron skillet, or in the well of a Korean BBQ pan: corn, Parmesan, mayonnaise, 1 1/2 cups mozzarella cheese, gochugaru, green onions, and salt.
  • Create cheesy goodness: Heat a skillet over low heat and stir until the cheese melts. Remove from heat, sprinkle with remaining 1/2 cup mozzarella and 1/2 teaspoon gochugaru.
