Spicy Korean-Mexican corn grilled to perfection for a mouthwatering dish.
Ingredients:
  • 1 cup crumbled Cotija cheese
  • 0.25 cup mayonnaise
  • 0.25 cup Mexican crema
  • 0.25 cup Korean red chili pepper paste (gochujang)
  • 0.25 cup chopped fresh cilantro
  • 4 ears corn
  • 4 tablespoons melted butter
  • 4 lime wedges
Instructions:
  • Combine the Cotija cheese, mayonnaise, crema, chili pepper paste, cilantro, and garlic in a large bowl, then refrigerate until chilled.
  • Peel back husks of each corn ear 3/4 of the way, removing silk without detaching husks. Fold husks back up.
  • In a large skillet over high heat, heat cooking oil until shimmering. Add ears of corn and char sides, rotating every 5 minutes. Season each side under the husks with salt and pepper.
  • Blend the melted butter into the cold cheese mixture until fully combined. Gently peel back the corn husks without removing them. Use a spoon to generously coat the corn with the cheese mixture all around. Garnish with lime wedges before serving.
