Korean-inspired Gochujang shrimp paired with crisp lettuce, cucumber, and carrot for a delightful appetizer that can be enjoyed as wraps or a salad.
Ingredients:
  • 2 tablespoons butter
  • 1 teaspoon toasted sesame oil
  • 3 green onions, chopped, white and green parts separated
  • 1 pound fresh medium shrimp, peeled and deveined
  • 1 tablespoon gochujang (Korean hot pepper paste)
  • 1 teaspoon reduced-sodium soy sauce
  • 1 teaspoon honey
  • 0.5 cup julienned cucumber
  • 0.25 cup julienned carrot
  • 1 tablespoon toasted sesame seeds
  • 8 leaves butterhead lettuce
  • 1 lemon, cut into wedges
Instructions:
  • In a large skillet over medium heat, melt butter with sesame oil. Add white parts of green onion and garlic; sauté until softened and aromatic, for about 1 minute. Add shrimp and cook until they turn opaque, stirring occasionally, for 3 to 5 minutes. Mix in gochujang, soy sauce, and honey; ensure the shrimp are coated evenly.
  • Combine crisp cucumber, vibrant carrot, fresh green parts of green onion, and nutty sesame seeds in a small bowl and gently mix together.
  • Layer shrimp mixture and cucumber mixture onto fresh, crisp lettuce leaves and garnish with lemon wedges before serving.
