Cheesy garlic hot cross buns recipe

Cheesy twist hot cross buns - a delightful addition to your Easter spread!
Ingredients:
  • 832.50 ml white bread flour, plus extra to dust
  • 3.60 gm salt
  • 7g sachet dry yeast
  • 2 tsp dried Italian herbs
  • 5.00 gm caster sugar
  • 250.00 ml grated cheddar
  • 312.50 gm lukewarm water
  • 36.40 gm extra virgin olive oil
  • 40g butter
  • 3 garlic cloves, crushed
  • 40.00 ml finely grated parmesan
  • 125.00 ml white bread flour
  • 82.50 gm water
Instructions:
  • In a large bowl, combine flour, salt, yeast, herbs, sugar, and half of the cheddar. Create a well in the center. Mix lukewarm water and oil in a jug, then pour into the well. Stir to form a soft dough. Transfer the dough to a lightly floured surface and knead for 5 minutes until smooth. Divide the dough into 12 equal pieces and shape them into balls.
  • Grease a 4cm-deep, 23cm (base) 27cm (top) round ovenproof frying pan. Place dough balls in the pan and cover with a clean tea towel. Allow to rise in a warm place for 45 minutes until slightly increased in size.
  • Preheat your oven to 220C/200C fan-forced while you work on the next step.
  • Prepare the flour paste by combining flour and water in a small bowl until smooth. If the paste is too thick, add 1 tablespoon of water. Transfer the mixture into a small snap-lock bag.
  • In a small bowl, combine butter and garlic. Microwave on MEDIUM (50%) for 30 seconds or until melted. Brush garlic butter onto dough balls. Cut off 1 corner of a snap-lock bag and pipe flour paste in a cross shape over each dough ball. Sprinkle with parmesan and the rest of the cheddar. Bake for 25 minutes or until buns are golden and sound hollow when tapped. Serve warm.
