Cheesy Gnocchi Florentine

Create a luscious white sauce to toss with store-bought gnocchi for an authentic Italian dish!
Ingredients:
  • 1 box (9 oz) frozen spinach
  • 1 tablespoon butter or margarine
  • 1/4 cup chopped onion
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1 1/4 cups half-and-half or milk
  • 1 package (16 oz) shelf-stable gnocchi
  • 1 cup shredded Gruyere cheese (4 oz)
  • 1/2 cup shredded Muenster cheese (2 oz)
  • 1/8 teaspoon ground nutmeg
  • 1 large plum (Roma) tomato, thinly sliced
  • 1 teaspoon olive oil
Instructions:
  • Preheat the oven to 350°F. Grease a 1 1/2-quart casserole dish with cooking spray. Prepare the spinach according to package instructions, drain in a colander or large strainer, and squeeze out excess moisture. Set aside.
  • In a 2-quart saucepan, melt butter until fragrant. Add onion and sauté for 2 to 3 minutes until softened. Mix in flour, then slowly pour in half-and-half. Add gnocchi and bring to a boil. Take off the heat and fold in cheeses and nutmeg.
  • Spread half of the gnocchi mixture in a casserole dish. Layer with spinach and remaining gnocchi mixture. Top with tomato slices and brush with olive oil.
  • Bake for approximately 30 minutes, or until the top is golden brown and bubbly, and the gnocchi is tender.
