Cozy vegetarian gnocchi for the whole family.
Ingredients:
  • Olive oil, to grease
  • 1 x 600g pkt fresh gnocchi
  • 1 bunch English spinach, trimmed, leaves washed, dried
  • 200g vegetarian cheese (Mainland brand), coarsely grated
  • 20.00 ml plain flour
  • 250ml (1 cup) milk
  • Salt & freshly ground black pepper
Instructions:
  • Preheat oven to 200°C. Grease a 1L baking dish with a light brush of oil. Cook gnocchi in boiling water in a large saucepan as directed on the packet until they float to the surface, about 5 minutes. Drain well.
  • Place the spinach in a bowl and cover with hot water. Let it sit for 3 minutes until just wilted. Drain well before using.
  • In a medium saucepan, mix cheese and flour. Slowly add in the milk. Cook over medium heat, stirring consistently for 3 minutes until the cheese melts and the sauce thickens.
  • Spread the spinach evenly in the dish. Top with the gnocchi and drizzle the cheesy sauce over. Bake in the oven until golden and season with salt and pepper.
