Cheesy ranch broccoli side dish - a crowd-pleaser for seconds!
Ingredients:
  • 10 cups fresh small broccoli florets
  • 1 medium red bell pepper, chopped
  • 1/4 cup water
  • 1 container (8 oz) cream cheese spread, softened
  • 1/2 cup milk
  • 1 package (1 oz) ranch salad dressing & seasoning mix
  • 2 cups shredded Cheddar cheese (8 oz)
  • 15 coarsely broken Ritz™ crackers
  • 1 tablespoon butter, melted
Instructions:
  • Preheat oven to 350°F and generously coat a 12x8-inch (2-quart) baking dish with cooking spray.
  • Place the broccoli and bell pepper in a large microwave-safe glass bowl with water, cover with plastic wrap, and microwave on High for 4 to 5 minutes. Remember to give it a stir after 2 minutes. Once the broccoli is vibrant in color and hot, drain the water and return the vegetables to the bowl.
  • In a medium microwavable glass bowl, combine cream cheese spread and milk. Microwave uncovered on High for 1 minute. Whisk until smooth (it's okay if there are a few small lumps).
  • Combine dressing mix with cream cheese until well blended. Mix in cheese until fully combined. Pour the cheese mixture over the broccoli and bell pepper, tossing to evenly coat. Spread the mixture into a baking dish.
  • Toss crackers in melted butter in a small bowl, then sprinkle over broccoli.
  • Bake until golden and bubbling, about 25-30 minutes.
