Cheesy Spinach Lasagna Rolls

Easy and elegant dish that's a delight to both make and present!
Ingredients:
  • 8 uncooked lasagna noodles
  • 1/2 lb lean ground turkey
  • 2 cloves garlic, minced
  • 1 jar (26 oz) tomato pasta sauce
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon fennel seed, if desired
  • 1 cup part-skim ricotta or cottage cheese
  • 1/2 cup shredded carrot (1 small)
  • 1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
  • 2 egg whites or 1 egg
  • 1 cup shredded mozzarella cheese (4 oz)
Instructions:
  • Preheat oven to 350°F. Boil lasagna noodles according to package instructions. Drain and rinse with hot water.
  • In a 10-inch skillet, sauté ground turkey and garlic over medium-high heat until the turkey is no longer pink; drain excess fat if needed. Add pasta sauce, Italian seasoning, and fennel. Simmer uncovered on low heat for 15 minutes, stirring occasionally.
  • Combine ricotta cheese, carrot, spinach, and egg whites in a small bowl. Spread 1/4 cup of spinach filling onto each cooked lasagna noodle, leaving a 1-inch border on one short end. Roll up tightly towards the end without filling.
  • Set aside 1 1/2 cups of sauce. Spread the rest of the sauce in a 12x8-inch (2-quart) glass baking dish. Place the rolls, seam side down, in the sauce. Pour the reserved sauce over the rolls.
  • Cover with foil and bake until hot and bubbly for 30-40 minutes. Sprinkle mozzarella cheese on top and bake uncovered for an additional 3-5 minutes until cheese is melted. Allow to stand for 5 minutes before serving.
