Spinach Lasagna Roll Ups

Delicious spinach and cheese stuffed lasagna rolls.
Ingredients:
  • 8 lasagna noodles
  • 2 large cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup ricotta cheese
  • 1 (14 ounce) jar spaghetti sauce
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • Bring a pot of salted water to a boil. Cook lasagna for 8 minutes until al dente; drain and lay flat on a surface.
  • In a skillet, warm olive oil over medium heat. Sauté garlic until fragrant for about 2 minutes. Transfer the garlic to a large bowl and combine with spinach, ricotta cheese, mozzarella cheese, and salt. Mix until well combined.
  • Place a generous 1/4 cup of spinach mixture onto the center of each lasagna noodle. Roll the noodle tightly around the filling and place the rolled noodles in a baking dish. Pour spaghetti sauce over the noodles and cover the dish with aluminum foil.
  • After baking for 30 minutes in a preheated oven, remove foil and bake for an additional 5 minutes. Serve sprinkled with Parmesan cheese.
