Try these delicious cheesy-mite scrolls to jazz up your lunchbox!
Ingredients:
  • 30g butter
  • 300.00 gm self-raising flour, sifted
  • 193.13 gm milk
  • 20.00 ml Vegemite
  • 187.50 ml reduced-fat tasty cheese
  • Extra milk, to brush
  • 62.50 ml grated cheese, to sprinkle
Instructions:
  • Preheat your oven to a toasty 220°C/200°C fan-forced.
  • Combine butter and sifted self-raising flour in a bowl, rubbing with your fingers until it resembles breadcrumbs. Create a well in the center and pour in 3/4 cup milk. Mix with a butter knife until a soft dough forms, adding more milk if needed. Transfer to a lightly floured surface, kneading gently until smooth (avoid over-kneading).
  • Roll out the dough into a 20cm x 30cm rectangle. Spread Vegemite over the dough, leaving a 1cm strip along one long side. Sprinkle with 3/4 cup of cheese. Roll up tightly from the long side. Trim the ends. Cut into 8 slices that are 2.5cm thick. Place the slices 3cm apart on 2 baking paper-lined trays. Brush with extra milk and sprinkle with 1/4 cup of grated cheese. Bake for 20 minutes or until golden. Allow to cool and store in an airtight container for up to 2 days.
