Irresistible bacon jam with crispy bacon, caramelized onions, brown sugar, sherry vinegar, balsamic vinegar, and a touch of olive oil for a savory-sweet flavor explosion.
Ingredients:
  • 1.5 pounds bacon, chopped
  • 2 teaspoons butter
  • 4 large yellow onions, diced
  • 0.25 cup brown sugar
  • 0.25 cup sherry vinegar
  • 1.5 teaspoons fresh thyme leaves, divided
  • 1 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 0.5 cup water
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons extra-virgin olive oil
Instructions:
  • Heat a large, heavy-bottomed pot over medium heat. Cook the bacon until crispy and the fat starts to foam, about 10 minutes. Strain the bacon and rendered fat into a bowl. Once cooled, finely chop the bacon on a cutting board.
  • Drizzle 2 teaspoons of reserved bacon fat and butter into the pot on medium heat, then add onions and salt. Cook until soft and translucent, about 7 to 10 minutes.
  • Mix brown sugar, sherry vinegar, 1 teaspoon thyme leaves, black pepper, and cayenne into the onion mixture, then add the bacon. Stir in water and cook until the jam turns brick-brown and thickens, about 10 to 15 minutes.
  • Take off the heat and stir in balsamic vinegar, olive oil, and the rest of the thyme; continue stirring until glossy and warm.
  • Place in a sealed container to keep it fresh.
