Try Chef John's easy one-bowl Hollandaise sauce with cold butter for a delicious twist!
Ingredients:
  • Salt to taste
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 tablespoon fresh lemon juice
  • 1 pinch cayenne pepper
  • 4 tablespoons cold unsalted butter, cubed
Instructions:
  • In a large stainless steel bowl, whisk together egg yolk, water, lemon juice, salt, and cayenne pepper. Gently stir in butter cubes.
  • Place a bowl over low heat and whisk continuously until the butter is melted and the mixture becomes foamy, approximately 3 minutes. Keep whisking over low heat until the sauce reaches your preferred thickness, for an additional 3 to 5 minutes.
