Chef John's Ham and Cheese Calzones

Delicious homemade calzones filled with prosciutto, smoked ham, ricotta, and mozzarella cheese, served with marinara dipping sauce on the side.
Ingredients:
  • 24 ounces prepared pizza dough
  • 8 slices prosciutto
  • 2 cups ricotta cheese, drained
  • 0.5 teaspoon freshly ground black pepper to taste
  • 0.5 teaspoon cayenne pepper
  • 1.5 cups finely diced smoked ham
  • 4 ounces fresh mozzarella cheese, thinly sliced, drained on paper towels
  • 1 teaspoon extra-virgin olive oil
  • 1 tablespoon cornmeal
  • 1 teaspoon water
  • 1 tablespoon freshly grated Parmigiano-Reggiano cheese
  • 2 cups marinara sauce for dipping, heated
Instructions:
  • Preheat your oven to a toasty 500 degrees F (260 degrees C) and line a baking sheet with parchment paper for easy cleanup.
  • Divide dough into 4 equal portions and shape into balls. Flatten each ball into a circle on a lightly floured surface, rolling out into 8- or 9-inch circles.
  • Lay down 2 prosciutto slices on one side of each dough circle, keeping a 1-inch border. Spread ricotta cheese over the prosciutto. Sprinkle with a pinch of salt, pepper, and cayenne. Add chopped ham, mozzarella slices, and finish with a drizzle of olive oil.
  • Brush the edge of the dough with water using your fingertip. Fold the dough in half over the filling and gently press to seal. Crimp the edges to completely seal the calzone.
  • Sprinkle a baking sheet lined with cornmeal. Place calzones on the sheet. Cut small slits in the crust to vent.
  • Prepare a luxurious egg wash by whisking together the egg and water. Tenderly brush the calzones with this exquisite mixture. Sprinkle them with an abundance of grated Parmigiano-Reggiano cheese. Prior to baking, make sure to clear away any excess cornmeal and cheese surrounding the calzones to prevent smoke in the oven.
  • Bake in a preheated oven until golden brown, approximately 15 minutes. Allow to cool for 15 minutes before serving. Enjoy with warm marinara sauce on the side for dipping.
