Cherries poached in sparkling wine

Vibrant poached cherry dessert bursting with summer flavors.
Ingredients:
  • 500ml (2 cups) sparkling white wine
  • 115g (1/2 cup) caster sugar
  • 60ml (1/4 cup) honey
  • 1 vanilla bean
  • 750g ripe cherries, stems removed, pitted (if desired)
  • 7.50 gm arrowroot
  • Vanilla ice-cream, to serve
Instructions:
  • In a medium saucepan, combine 435ml (1 3/4 cups) of sparkling wine with the sugar and honey.
  • Split the vanilla bean lengthwise with a small sharp knife, scrape the seeds into the pan, and add the vanilla bean. Cook over medium heat, stirring, for 5 minutes until the sugar dissolves and the mixture simmers.
  • Add the cherries into the mixture and bring it back to a gentle simmer. Lower the heat to low and delicately poach the cherries, without covering, for about 5 minutes or until they are tender.
  • Strain the cherries and their juices through a sieve into a medium bowl. Remove and discard the vanilla bean. (You can also rinse and air-dry the vanilla bean, then store it in a jar of sugar to create your own vanilla sugar.) Transfer the liquid back to the pan and bring to a boil over high heat. Boil without a lid for 10 minutes or until it slightly thickens.
  • Mix the arrowroot and remaining sparkling wine until smooth in a small bowl. Pour into the pan, reduce heat to medium, and stir until it boils. Add the cherries back to the pan, then remove from heat. Serve warm or at room temperature with ice-cream.
